Protein Gingerbread Cookies Recipe – Healthy, Gluten and Dairy Free

We are exactly a month away from the Christmas day so it’s about time to start the preparations. Time to start Christmas gift shopping, decorate the house, get a Christmas tree and – of course – bake some delicious gingerbread cookies.

For all fitness enthusiasts out there, we turned the famous Christmas sweet into a healthy and nutritious high protein post-workout snack. All ingredients used to make our Protein Gingerbread Cookies are also gluten and diary free.

POST WORKOUT GINGERBREAD

During exercising you loose many nutrients through sweat so it’s crucial to replenish them after your workout.

Our gingerbread cookies are made from many nutritious ingredients including coconut sugar, cocoa powder and molasses. These foods contain numerous minerals (iron, zinc, calcium, potassium, manganese, copper) and vitamins (vitamin C, riboflavin, niacin, vitamin B6). The cookies are based on buckwheat flour which is rich in dietary fibre and is a source of vegan protein.

Our gingerbread cookies contain collagen which not only provides extra proteins but can also boost muscle mass. Up to 10% of our muscle tissue is composed of collagen which is why adding collagen to your diet helps to keep your muscles strong and healthy. Collagen improves joint and bone health and consequently helps to prevent fitness injuries and joint pain.

The recipe is high in complex carbs from wholegrains that will rebalance the energy and blood sugar levels after your training.

DID YOU KNOW? Queen Elizabeth I is credited for inventing the gingerbread men shape. It’s believed that the first gingerbread men were made for the entertainment of the queen and were moulded to resemble her favourite suitors and courtiers.

Healthy high-protein gluten free, diary free gingerbread

INGREDIENTS

  • 2 cups buckwheat flour
  • 3/4 cup potato starch
  • 3/4 cup rice flour
  • 2tbs gingerbread spice
  • 1tsp ground cinnamon
  • 1tbs molasses
  • 2 eggs
  • 1/3 cup vegan butter (or coconut oil)
  • 2/3 cup coconut sugar
  • 2tsp cocoa powder
  • 2 servings of powdered collagen (or other protein powder)
  • 1tsp baking powder
  • 1tsp vanilla extract
  • pinch of salt

INSTRUCTIONS

  1. Mix all the ingredients together in a bowl. Knead the dough until firm consistancy. If your dough is too soft/sticky add more flour. If it’s too hard add coconut/almond milk.
  2. Roll out the dough to 2-4mm thickness.
  3. Cut out your favourite Christmas shapes.
  4. Lay out your cookies on a tray (Prepare the tray with aluminium foil or baking paper so the cookies don’t stick to the tray)
  5. Bake in 180°C for around 10 minutes or until the edges get a dark brown colour.
  6. Decorate with our healthy xylitol icing.
  7. Enjoy with family and friends!

GROUNDBREAKING XYLITOL ICING

One of the most enjoyable moments when making gingerbread cookies is definitely decorating them. It’s a great opportunity to spend some quality time with your family, kids and friends and get creative. Many healthy cookie alternatives skip the icing as it’s usually high in refined sugars and calories.

That’s why our icing is fully based on xylitol which contains 40% less calories compared to sugar. Unlike sugar, xylitol has a very low glycemic index so it doesn’t majorly affect your blood sugar or insulin levels. It’s also much better for your dental health as the bacteria responsible for plaque – streptococcus mutans – feeds on sugar but can’t live off xylitol

How to make xylitol icing?

 

  1. Grind xylitol granules into powder with a grinder (you can also buy a powdered xylitol).
  2. Add a little coconut/almond milk until the powder turns into thick liquid paste.
  3. Add food colouring of your choice to create variety of colours.

 

The xylitol icing dries few minutes after applying on the cookie.
